Serving Food French Families Relish

Chloe by Vincent is a new casual French restaurant in Downtown Minneapolis created by Chef Vincent Francoual, Restore Restaurant Holdings and restaurateur Erik Forsberg.

Located at 700 S. 3rd Street, inside the historic Canopy by Hilton Minneapolis Mill District hotel, the restaurant is named after Chef Vincent and Brenda Francoual’s young daughter, Chloe, who shares a love of cooking with her father. Chloe’s “signature” created our logo and one of her drawings, created while sitting at a hightop waiting for her father to finish in the kitchen, greets guests as they arrive.

Chef Vincent was the namesake and creative force behind Vincent, A Restaurant, which was frequently named the “the best French restaurant” in the Minneapolis-St. Paul area during its 14-year run.

Chloe is the first new restaurant from Restore Restaurant Holdings – a recently formed group pioneering a new way of running a restaurant company by collaborating with successful restaurateurs to rebuild the hospitality business in downtown Minneapolis and surrounding areas. RRH is headed by co-founders, attorney Dennis Monroe and his son, Matthew Monroe, along with Francoual and Erik Forsberg, the owner of Devil’s Advocate and Dan Kelly’s Bar, along with other businesses.

Meet the Team


Vincent Francoual

Chef
Chef Vincent Francoual’s journey in fine dining started when he was a teen in France and began working in kitchens in France and Italy. He landed a dream job at Le Bernardin, a four-star New York City French seafood restaurant, before moving to the Twin Cities as a chef at Un Deux Trois in downtown Minneapolis.

Francois got into the restaurant industry by accident, not design, but he stayed for 49 years and counting. “I have a passion for hospitality and always strive to anticipate and exceed our guests’ expectations,” Francois says. “We do this by satisfying guests’ five senses, and we are creating return guests by selling legal addictions (your Vincent or Chloe ‘s fix).” His favorite thing about Chloe by Vincent, is that the menu is truly French, and one only has to hear his accent to know he knows what he’s talking about.

Chef de Cuisine
Beth’s passion and borderline obsession with food has led to her 10-year career in the restaurant industry. What she likes best about cooking for Chloe by Vincent is its casual approach to French Cuisine. “CbV is a back-to-basics French cuisine, the way a French person would eat,” she says. Her favorite dish? “The Cassoulet. Tarbis beans, Duck Confit, Toulouse Sausage, it's just so classic French.” Who needs just one choice?
Chloe by Vincent is a partnership between Restore Restaurant Holdings and Erik Forsberg. Founding members of RRH are Dennis Monroe and Matt Monroe, along with partner, Vincent Francoual.
